
Tasty banana, macadamia and chia pudding with roasted seeds
This pudding is a tasty and healthy option for breakfast or as a snack. The banana and macadamia tastes great with the tahini and the seeds add a nice crunch and extra flavour. It is lactose and gluten free. Enjoy!

Ingredients
2 large ripe banana
2 cups macadamia milk
4 tbsp tahini
2 tbsp honey
2 tbsp white chia seeds
1 tbsp pepitas
1 tbsp sunflower seeds
1 tsp black chia seeds
Method
Break the banana into chunks and blend with the macadamia milk until smooth.
Add the honey and tahini to the banana and macadamia milk and blend to combine.
Add the white chia seeds and stir to combine. Pour the mixture into two glasses and refrigerate for a minimum of six hours or until set.
Just before you are ready to serve, heat a frypan on medium heat and add the pepitas, sunflower seeds and black chia and stir for 2 minutes to slightly roast. I usually do a bulk batch and store in airtight container for ready use.
Serve the pudding with the roasted pepitas, sunflower seeds and black chia seeds sprinkled on top.
