Banana Rum Sponge Cupcakes

This soft and fluffy banana cupcakes is very easy to make and tastes delicious with a hint of rum.



Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 12 cupcakes

Ingredients
3 large cold eggs
120g caster sugar 
180g ripe banana, mashed
150g cake flour
1/2 tsp baking powder
1/4 tsp baking soda
100ml vegetable oil 
1/4 tsp Rum

Method
Preheat the oven to 160C. Prepare muffin baking pan lined with cupcake cases.

In a bowl, sieve flour, baking soda and baking powder. Set aside.

Place cold eggs, sugar, Rum & mashed banana in a stand mixer bowl. Beat at maximum speed for 5 minutes until mixture is stiff and thick.



Turn the speed to low, mix in the flour mixture.



Mix in the oil until batter mixture is shiny.



Spoon batter into cupcake cases.



Bake for 45 minutes until skewer inserted comes out clean.
