Banana Sponge Cake

Light moist sponge cake full of banana goodness



Banana cake in a round 8 inch tin


Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 1 round cake or 12 cupcakes

Ingredients
3 eggs
1 cup sugar
3 medium bananas, mashed
1 1/3 cup all purpose flour
1/2 tsp baking powder
1/4 tsp bi of soda
100 ml oil (I use canola oil)

Method
Grease an 8 inch baking pan or muffin trays
Preheat oven to 160 Degree Celsius
Sieve flour, baking powder and soda together
Whisk eggs, sugar and bananas at maximum until batter is stiff
Add in the sieved flour mixture and fold well
Add in oil and mix until incorporated
Pour batter into baking tray and bake for about 30 mins or when skewer comes out clean and when cake springs back when touched
(optional) I placed chopped bananas on top of the cake because I had extra bananas to use

This is my 'go to' recipe when I have ripe bananas on hand and I have to prepare a last minute dessert! It requires very little ingredients yet produces a very simple and tasty cake that is perfect to finish any meal.
