Great for an appetizer, party plate, or snack. You can put as little or as much effort into it as you'd like and the ingredients are mostly interchangeable so you can customize this recipe to your liking.
Ingredients Flatbread, naan, or pizza base
2 chicken breasts
10g butter, melted
2 cloves garlic, minced
1 cup grated cheese (gouda, mozzarella, monterey jack, parmesan, and/or havarti)
1 tomato, diced
1/3 cup chopped green onions
1/4 cup chopped chives
Place chicken breasts in a covered container and marinate in the barbecue sauce approximately 2-3 hours in advance.
If you are using a grill leave breasts whole but if you are using an oven, cut into small slices or chunks and then marinate.
For a low maintenance snack, you can skip this stage but I promise you that it tastes even more delicious if you wait it out.
Grill chicken breasts on a medium heat until thoroughly cooked and cut into strips/chunks or broil strips/chunks in oven at 220c, flipping after 4 minutes for an additional 2 minutes or until cooked through.
Combine melted butter and minced garlic. Spread mixture on your flatbread base and drizzle with barbecue sauce.
Add chicken strips/chunks, diced tomatoes, chopped green onions, and grated cheese (always be generous with the cheese).
Drizzle a little more barbecue sauce on top and sprinkle with chives.
Bake in oven for 7-10 minutes, until cheese is melted.
Top with ground pepper and cut the flatbread into bite size slices, serve on platter.
