Barley Chicken & Vegetables Stew

A comfort bowl of stew soup that is full of vegetable sweetness, you don't have to season it with salt!



Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 4 servings

Ingredients
2 chicken thigh fillets, diced
2 carrots, peeled, diced
2 potatoes, peeled, diced
2 tomatoes, chopped
half a celery, chopped
1 cup pearl barley

Method
Wash and drain the barley. Soak in water for 15 minutes, drain.



Place all the vegetables and 1L of water in a stockpot. Bring to the boil.

Add in the chicken and barley. Cover and simmer for 40 minutes until chicken are cooked through and barley is tender.



Season with salt and black pepper, to your liking.

Divide among bowls and serve warm.
