A delicious honey flavoured cake that is perfect for a treat with tea or as a birthday or special occasion cake.

Ingredients
To make the honey cake
125g butter
½ cup honey
¼ cup caster sugar
3 large free-range eggs
1¾ cups self-raising flour, sifted
125ml milk
To make the frosting
1 cup icing sugar
1 cup butter
1/4 cup lemon juice
Method
Preheat the oven to 170 degrees C and lightly grease a springform baking tin.
Using an electric mixer, beat the butter, honey, and caster sugar together until creamy and pale.
Add the eggs one at a time and beat each into the mixture.
Fold in the flour and milk in alternating additions to form a smooth cake batter.
Spread the batter evenly into the prepared cake tin. Bake for 30 minutes, or until cooked when tested with a skewer.
Ice by beating together the icing sugar, butter, and lemon juice, then spreading this over the cake once cooled.
