A great base for many different types of muffins. Make the basic recipe and let your imagination run wild. Why not add white chocolate chips and macadamias or for a healthier alternative try bran, grated apple and cinnamon.
Preparation Time: 5 minutes
Cooking Time: Approximately 20 minutes
Makes: 12 - 18 depending on extra ingredients added
Ingredients 2 cups self-raising flour
1/2 cup sugar
1 egg, beaten
1/2 cup oil
1 cup milk
Preheat oven to 180 degrees Celsius and line muffin tin with patty pans.
In a mixing bowl, stir ingredients until just combined.
Add in your choice of flavours / extras (I chose 2 mashed ripe bananas, a cup of oats, a handful of white chocolate chips and some cinnamon - this made 15).
Bake for 20 minutes or until a skewer inserted into the centre of a muffin comes out clean.
