Now the muffins I have prepared in this recipe are Apple and Cinnamon Muffins (add three medium sized apples and 1/2 a teaspoon of cinnamon to sifted ingredients) and Mixed Berry Muffins (add 1/2 a cup of fresh or frozen berries after sifted ingredients). The patty pans not only look cute but save on cleaning up as well.

Cooking Time: 12-15 minutes
Makes: 12 servings
Ingredients
50 gm of butter, softened
1/2 cup of brown sugar
1 egg
3/4 cup of wholemeal flour
3/4 cup of plain flour
Pinch of salt
1/2 teaspoon of baking soda (or bi-carb soda)
3/4 cup of milk
Method
Preheat oven to 200 degrees
Cream butter and sugar together in a bowl
Sift wholemeal four, plain flour and salt.
Dissolve baking soda in milk.
Add sifted ingredients alternating with soda-milk to the creamed mixture, mixing just to combine.
Add half a cup of desired fruit to the mixture
Spoon mixture into greased muffin tins
Cook for 12 to 15 minutes (depending on oven)
