Basil and Ricotta Pesto

This is a healthy alternative to the typical basil pesto as it contains no oil or parmesan. It's delicious as a dip, on sandwiches, or stirred through pasta.



Basil and ricotta pesto


Preparation Time: 15-20 minutes
Makes: 1 cup

Ingredients
2 cups firmly packed basil leaves
1/2 cup low fat ricotta
2 garlic cloves
Juice of 1/2 lemon
Small handful of cashews
Salt and pepper

Method
Chop the cloves and cashews. I used the underside of a mug for the nuts.

Loosely tear the basil leaves and place them in a food processor. If, like me, you have an inadequate processor, firstly blend the leaves until they are finely cut up.

Add all the other ingredients to the processor and blend until you achieve a smooth consistency.
