Basil Pesto

Fortunately, adopting a vegan diet doesn't mean missing out - in fact, you can have all the flavour and the added bonus of heart healthy fats from the nuts.

Pesto can be made with coriander or parsley if you would prefer, but basil is definitely our favourite herb here!

We recommend using this pesto in pastas, on home-made pizzas, or atop a salad or steaming bowl of veggie soup.



Preparation Time: 5 minutes
Serves: 4

Ingredients
2 cups basil leaves, loosely packed
1/4 cup cashews
1/4 cup walnuts
1/2 cup pine nuts
2 cloves garlic
1/4 cup extra-virgin olive oil

Method
Blitz basil, cashew, walnuts, pine nuts and garlic in a food processor until a fine crumble has formed.



Drizzle over oil while mixing until a smooth, consistent pesto has formed.
