This vibrantly coloured and innately healthful South American dish is a great way to incorporate a filling and tasty vegetarian meal into your week. As the ingredients are predominately fresh produce vegetables, it does rely on having high quality components to achieve the plethora of different flavours.
Cook rice according to packet instructions (should take around 25 mins to cook through). Drain and set aside to cool.
Over a medium heat, warm the oil in a saucepan and add the onions and garlic, cooking until soft. Mix through the chilli flakes and remove from heat.
Meanwhile, in another pan, place half of the tomatoes in 150ml of water and simmer until they start to break down (roughly 15 mins).
In a large bowl, add the beans, avocado, coriander leaves and remaining tomatoes to the onion/garlic mix and stir through. Serve on a bed of wild rice, or - as we have just discovered - eat in a warmed wrap, burrito style!
