Beancurd with Minced Pork & Garlic Prawns

This simple Chinese dish is made with the combination of beancurd, minced pork and garlic prawns. Yummy!

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 6 servings

500g pork mince
1 block fresh beancurd, diced
3 tablespoons oyster sauce
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon white pepper powder
1/2 cup vegetable stock
1 teaspoon cornstarch
2 cloves garlic, minced
2 stalks scallion, chopped
steamed jasmine rice, to serve

For the Garlic Prawns
200g prawns, peeled
2 cloves garlic, minced
1 teaspoon minced parsley

In a bowl, marinade the prawns with minced garlic and parsley.

Heat 2 tablespoons of vegetable oil in a large frying pan. Add in the minced garlic and fry until fragrant.

Add in the pork mince. Use the wooden spoon to break the lumps. Cook until they are browned.

Add in the diced beancurd and gently mix.

Add in the oyster sauce, soy sauce, sesame oil and white pepper powder. Mix to combine.

Pour in the vegetable stock and bring to the boil. Add in the marinated prawns.

Cover and simmer for 3 minutes until the prawns are cooked but still juicy and crunchy.

Mix the cornstarch with 2 tablespoons of water. Pour in to the pan while stirring continuously until the gravy thickens.

Sprinkle the chopped scallions and serve with steamed jasmine rice.
