Bee Cake

As you might have guessed with a recipe with 'bee' in the title, this cake has a good glug of honey. There is one ingredient you probably did not expect though, and that is pollen. Bee pollen is a superfood which you can find in most health stores, and has all sorts of health benefits. It is full of vitamins, minerals, carbohydrates, lipids, and protein and is good for digestion, circulation, and increases your immunity to disease. On top of all that, it tastes pretty good too. Usually bee pollen is sprinkled over cereal, but here I've added it to a cake for an extra bit of buzz. As the honey provides so much sweetness, you don't need any extra sugar, making this a healthy cake all round. Based on the brands I've used, each slice is about 114 calories.

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Makes: 10 servings

Ingredients
100g wholemeal flour
100g clear honey
60g set honey
3 large eggs
4 tsp bee pollen
1 tsp light margarine

Method
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Heat the clear honey in a microwave for a few seconds heat until extra runny.
Separate the eggs and beat the yolks with the clear honey and three teaspoons of bee pollen.
Mix in the flour.
Whisk the whites to soft peaks and fold into the mixture.



Pour the mixture into a loaf tin and bake in the oven.
Melt the margarine and set honey in the microwave, and then stir in one teaspoon of bee pollen.
Pierce the top of the cake with holes and drizzle the honey over the top.
