As you might have guessed with a recipe with 'bee' in the title, this cake has a good glug of honey. There is one ingredient you probably did not expect though, and that is pollen. Bee pollen is a superfood which you can find in most health stores, and has all sorts of health benefits. It is full of vitamins, minerals, carbohydrates, lipids, and protein and is good for digestion, circulation, and increases your immunity to disease. On top of all that, it tastes pretty good too. Usually bee pollen is sprinkled over cereal, but here I've added it to a cake for an extra bit of buzz. As the honey provides so much sweetness, you don't need any extra sugar, making this a healthy cake all round. Based on the brands I've used, each slice is about 114 calories.
