Ingredients 500g beef rump, thinly sliced
1 cup teriyaki marinade
4 medium-sized red capsicums, cut into diamonds
2 zucchinis, cut into triangles
Freshly ground black pepper, to taste
Steamed rice, to serve
Marinate the beef slices with the teriyaki marinade for 15 minutes.
Heat 2 tablespoons of vegetable oil in a saucepan and add in the red capsicums and zucchinis. Stir-fry for 10 minutes until they are tender but still crunchy.
Add in the marinated beef together with the excess marinade. Mix and stir-fry for 10 minutes.
