Beef Teriyaki with Vegetables

Teriyaki Marinade makes a great stir-fry dish. Try this recipe with for a hearty beef and vegetables stir-fry.



Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
500g beef rump, thinly sliced
1 cup teriyaki marinade
4 medium-sized red capsicums, cut into diamonds
2 zucchinis, cut into triangles
Freshly ground black pepper, to taste
Steamed rice, to serve

Method
Marinate the beef slices with the teriyaki marinade for 15 minutes.



Heat 2 tablespoons of vegetable oil in a saucepan and add in the red capsicums and zucchinis. Stir-fry for 10 minutes until they are tender but still crunchy.



Add in the marinated beef together with the excess marinade. Mix and stir-fry for 10 minutes.



Cover and let it cook in the steam for 5 minutes.



Uncover and serve immediately with steamed rice.
