Beetroot Ice Cream

Have you tried making icecream from frozen bananas yet? It is my absolute favourite way to make icecream. It's fat-free, with no added sugar, and suitable for anyone with allergies (except if you have a banana allergy...you might not want to try this).

While banana icecream is delicious in it's pure form, I love adding other fruit or vegetables to it. I added beetroot to banana icecream this week, which gave the most beautifully rich colour, and also that unique beetroot-y earthy flavour. It was a loved treat by all my children!

Beetroot icecream

Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 2 servings

3 frozen ripe bananas, peeled and chopped
1/2 beetroot
Optional toppings: fresh fruit, nuts, coconut

Remove the bananas from the freezer.
Peel the beetroot and roughly dice.
Add bananas and beetroot to a high speed blender (or use a Yonanas Frozen Treat Maker) and blend on a high speed, using the tamper to push the food into the blades. Blend until smooth and creamy. For some blenders, you might need to add a little bit of liquid to help it blend smoothly.

Beetroot icecream

ALTERNATIVELY: blend unfrozen bananas and beetroot until smooth, then freeze in a freezer safe container, stirring every hour until solid.
Serve immediately.
