Beetroot Pulao

Beetroot Pulao

Beetroot is one vegetable that tops my list of vegetables. It is full of anti-oxidants, low in calories and full of nutrients. Can be made in no time with just a few ingredients to go into your lunchbox or the kid's. Kids who don't like beetroot will enjoy this sweet and tasty Pulao.

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 4 servings

11/2 cups of uncooked basmati rice.
1 cup of grated beetroot
1 chopped onion
1 tsp cumin seeds
2 tbsp chopped garlic
2-3 tbsp ghee for cooking
salt to taste

Wash the rice in water till the water runs clear. Soak it in 2 cups of water for 10 -15 mins.

Cook the rice, covered on medium heat till all the water is absorbed.

Heat the ghee in a non-stick pan, add cumin seeds and onions.

Fry the onions till golden brown.

Add the grated beetroot, garlic and salt.

Cook covered till the beetroot is soft and tender - this may take a few minutes.

Now add the cooked rice and mix well.

Serve with yogurt or pack in your lunchbox.
