Berry Swirl Chilled Cheesecake

A gorgeous chilled cheesecake recipe that is simple and sure to wow any of your guests.

Preparation Time: 30 minutes
Cooking Time: 0 minutes
Makes: 10 servings


250g Marie biscuis
125g melted unsalted butter
500g cream cheese, softened
1 cup of thickened cream
1/2 cup caster sugar
Zest and juice of a lemon
3 tsp powdered gelatine
1/4 cup boiling water

Berry sauce:
1 packet frozen mixed berries
2 tbs sugar
1/4 cup water
1 tbs cornflour

Process the bIscuits until they are a fine crumb and mix in the melted butter. Press firmly into sides and base of a 20cm springform pan.
Beat cream cheese and sugar until smooth, add lemon juice and zest and cream and beat well.
To the 1/4 cup boiling water add the gelatine and mix well until dissolved and then beat into cream cheese mixture.
Pour the cream cheese mixture into the biscuit base and smooth the surface.
For the berry sauce place all the ingredients in a saucepan on medium heat for 3-4 minutes until berries have softened and broken down.
Pass through a seive and spoon small drops around the cake.
With a knife or skewer swirl the sauce to create the effect you desire.
Chill in the fridge for a minimum of 4 hours.
Use the remainder of the sauce to serve.
