A fried snack composed of shredded beef mixed with a thick brown sauce.
Preparation Time: 30 mins plus 1 day standing
Cooking Time: 3 1/2 hrs
Ingredients Simmer: 1/2 kg beef
1/2 tsp salt
1/2 tsp black peppercorns
1 pc bay leaf
30 g white onion
30 g carrots
30 g celery
800 ml water
Gravy: 40 g butter
40 g all-purpose flour
400 ml brown stock
1/8 tsp salt
1/8 tsp ground black pepper
Other ingredients: 100 g all-purpose flour
2 pcs eggs
200 g breadcrumbs
500 ml vegetable oil
In a pot with water: put the beef, salt, black peppercorns, bay leaf, white onion, carrots, and celery.
Simmer it for 3 hrs or until tender.
Remove the beef from the pot, then shred it.
Strain and reserve the broth.
In a pan, melt the butter and add the flour.
Add the broth from the beef.
Whisk it until it became smooth and thick.
Season it with salt and black pepper.
Pour it into the shredded beef.
Mix it well and place it in a chiller for a day.
Weigh and shape the mixture into balls.
Coat it with flour, eggs and breadcrumbs.
Deep-fry the balls in a pan with oil until golden brown.
