Black Bean Rice

This is a really simple recipe that makes rice alot more interesting. Popular in Latin Amercan cuisine, black beans have a host of nutrional benefits as well as looking and tasting great in this side dish.

Black bean, rice

My rather picky son also enjoyed this dish which was an added bonus for me and it tastes great alongside roasted chicken.

Preparation Time: 5 minutes
Cooking Time: 12 minutes
Makes: 3-4 servings

Olive oil
2 spring onions
350g tin black beans in water
250g long grain rice
600ml chicken stock

Heat a good glug of olive oil in a large saucepan.
Finely dice the spring onions and gently fry in the olive oil until soft.

Drain the black beans and rinse well.
Add the beans, rice and stock to the saucepan.

Bring to the boil and then reduce to a simmer.
Give the rice a stir, cover and leave for 12-14 minutes.
The rice will then have absorbed the chicken stock and should be tender and full of flavour.
