Ingredients 200g Fettucine
1 tblsp oil
60g creamy blue cheese, crumbled
1/2 cup cream (I used Cream for cooking as lower in fat)
50 g smoked salmon, sliced
2 tblsp capers
Juice of 1/2 lemon
Boil water and oil and cook fettucine as per instructions on packet. I cooked it for 6 minutes.
While this is cooking, place the cream and blue cheese in a bowl and microwave for 1-2 minutes, stirring a few times during cooking.
Blend the salmon, capers and lemon juice.
Then add this mixture to the cheese mixture, and microwave for under 1 minute.
Drain the noodles.
Toss through the hot, drained fettucine, and serve.
