Blueberry Muffins

Blueberry muffins are a wonderful treat, they are great for morning tea, afternoon tea or even breakfast on the go.

Preparation Time: 5 minutes
Cooking Time: 2 minutes
Makes: 12

Ingredients
2 1/2 cups SR flour
2 tbs sugar
3/4 cup brown sugar
1 cup milk
1 large egg
1/2 cup vegetable oil
1 tsp vanilla essence
1 cup blueberries

Method
Preheat oven to 190C and line a 12 hole muffin tin with paper cases.
Combine the flour, sugar and brown sugar in a large bowl.
Add the milk, egg, oil and vanilla and mix until just combined.
Gently stir through the blueberries, take care not to squash them as you stir.

Divide the mixture evenly between the 12 muffin cases and bake for 20 minutes.

After baking, allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Note: You can use fresh or frozen blueberries.
