Blueberry & Pear Loaf

This moist and naturally sweet loaf is a perfect indulgence that doesn't leave you feeling guilty or weighed down. The light fruitiness complements a spring afternoon with a cup of tea, or sliced and toasted for a morning snack.

I defy you not to enjoy this!



Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 12 slices

Ingredients
415g can pear slices in syrup, drained and roughly chopped
125g butter, melted
3/4 cup caster sugar
2 eggs
1 1/2 cups self raising flour
1/3 cup milk
1 cup frozen blueberries
icing sugar, optional

Method
Preheat oven to 180C. Line a loaf pan (or cake tin) with baking paper.
In a large mixing bowl, cream the butter and sugar until well combined, then add the eggs - one at a time - beating well after each addition.

Sift the flour over the mixture and add the milk, berries and chopped pear to the batter.

Pour mixture into prepared tin and transfer to the oven. Bake for 40 minutes or until golden and cooked through, then set aside to cool on a wire rack.

Dust with icing sugar if desired before serving.
