Ingredients 2 onions
2 carrots, chopped
3 celery sticks, chopped
1 tbs butter
1/2 red capsicum
1 tbs crushed garlic
1 large sprig of rosemary
1 tbs chilli flakes
1 tbs parsley
1 cup of red wine
2 400ml tins of diced tomatos
handful of spinach
1 large tin of tuna in brine
1/2 pkt dry spaghetti
salt and pepper
Dice the onions and saute in butter.
Add the garlic, parsley, rosemary and chilli.
Put the chopped carrots and celery in the saucepan.
Add the sliced capsicum and mushrooms.
Bring to the boil in the tomatos and wine.
Cook until the vegetables are soft.
While the sauce is cooking, boil another pot of water for the pasta.
When the vegetables are soft, add the drained tuna.
Add the spinach.
Season with pepper and salt.
When the pasta is cooked, drain and mix with half of the sauce.
