Bombe Alaska with Brandy

Quick and easy dessert, which looks impressive and tastes delicious.

Bombe Alaska with Brandy


Preparation Time: 15 minutes
Cooking Time: less than 10 minutes
Makes: 4 servings

Ingredients
4 egg whites
½ tablespoon white vinegar
150g caster sugar
1 plain Madiera cake
1litre strawberry ice cream
1 punnet strawberries, halved and soaked in ½ cup brandy
½ cup brandy for flambé

Method
Step 1
Preheat oven to 220C.

Step 2
Whip the egg whites on high speed until soft peaks have formed. Add the vinegar and sprinkle in the sugar.

Step 3
Place a layer of madeira cake on a stainless steel plate or in a large glass bowl; add the brandied strawberries. Drizzle over some of the liquid to add flavour.

Step 4
Spoon over a layer of ice cream.

Step 5
Spoon or pipe the meringue over the ice cream. Place into the oven until lightly browned - approximately 5-6 minutes and serve with flaming brandy poured over.

Step 6
Decorate with fresh fruit.
