Braised Eggs in Tomato Salsa

My mum grew up in a small Italian village near Naples and with this idyllic lifestyle came the very real existence of sustainable living and bartering produce with neighbours and fellow villagers.

My mum’s family would trade goats’ milk for eggs and my great-grandmother would use those eggs to make this very simple and quick egg casserole style dish for her family.

This quirky little dish where boiled eggs are braised in a rich, herb infused, tomato salsa has been passed down throughout the generations. It’s a classic southern Italian dish that stems from Cucina Povera (loosely translated as the poor man’s kitchen). Hope you enjoy this as much as our family does.

Braised Eggs in Tomato Salsa.

Preparation Time: 10-mins
Cooking Time: 10-mins
Makes: 2 entrée servings

4 Eggs
375ml Tomato Salsa
1 Teaspoon of Olive Oil
½ Diced Onion
1 Teaspoon Oregano
½ Teaspoon Black Pepper
½ Teaspoon Salt
1 Teaspoon Fresh Chilli

Bring a small saucepan filled with water to the boil.

Add eggs (still in their shell) and hard boil for approximately 6-8 minutes.

Drain and allow eggs to cool, peel the shells then cut the eggs in half lengthwise.

While the eggs are cooking, in another saucepan heat the olive oil and add the onion. Sauté onion for approximately 2-3 minutes until opaque and slightly golden in colour.

Add the basil, oregano, chilli, salt and pepper and sauté the ingredients for 1-2 minutes finally adding the Tomato Salsa. Cook for approximately 5 minutes.

Simmer the sautéed onions, basil, oregano, chilli, salt, pepper and tomato salsa to create a rich, herb infused sauce to braise the boiled eggs.

Arrange the egg halves in the Tomato Salsa yolk-side up and simmer for approximately 5 minutes until the eggs have heated through and the tomato salsa and herbs have infused throughout the eggs.

Scoop eggs and Tomato Salsa onto a serving platter. Serve with some salad and warm crusty bread. As an option, garnish with some shredded basil leaves.

This dish is equally delicious when eaten cold and can be enjoyed all year round. It’s an incredibly easy and portable dish to enjoy on a picnic.
