Braised Steak And Onion

An old favourite, I remember when my dad had to feed me he would open a can of Braised Steak and Onion. It was a sight thats for sure, but when he heated it up it was like nothing I'd ever tasted before (not always a good thing)

The cheaper cuts of meat often lend themselves to longer cooking styles, the flavour that oyster blase has is beatiful. The longer it cooks, the stickier it gets and the more it will fall apart.

Served

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 2 servings

Ingredients
500 gm oyster blade steak
1 small brown onion
2 bacon rashers
1 clove garlic
2 tsp mustard
Sea salt and freshly ground black pepper
40 ml red wine
120 ml beef stock
1/4 bunch fresh basil
1 tbsp thickened cream (optional)
TO SERVE
Olive oil
Sea salt and freshly ground black pepper



Served

Method
Slice the onion thinly, length ways, shred the bacon and chop or crush the garlic.
Turn on the oven, 180c. Heat a lidded and oven proof saute pan large enough to hold all the ingredients. Put a little oil in the bottom. Season the meat with salt and pepper.
Sear the steak on both sides until caramelised and brown. Remove from the pan and keep warm.



Served

Add to the pan the onions, bacon and garlic, toss until cooked, deglaze the pan with the red wine and mustard. Reduce slightly.

Frying

Add the stock and roughly chopped basil and bring to the boil.

Return the steak to the pan and spoon over some of the sauce. When it returns to the boil, cover and place in the oven for 30 minutes.

Remove from ther oven and place the pan on medium heat. Be careful becasue the handle will be hot.
Remove the meat and place in a warm spot. Add the cream (if using) to the pan and reduce the sauce until it coats the back of a spoon. Correct the seasoning and return meat to pan.



Reducing

I serve mine with mashed potato, rocket leaves and crusty bread.
Spoon the mash onto the plate and flatten slightly, add some rockets and place the steak on top. Spoon over the sauce, drizzle with olive oil and freshly ground black pepper.
