Brazilian Aubergine Soup

This beautifully coloured and tasty soup will spirit you away to Salvador de Bahia! You only have to listen to hear samba music...



Preparation Time: 20 minutes
Cooking Time: 35 minutes
Makes: 4 servings

Ingredients
2 large aubergine
2 large cloves of garlic
3 spring onions
1 green chilli
1L vegetable stock
250g fresh tomatoes
1/2 bunch coriander

Method
Cut the aubergine in half and then cut it into small cubes. Salt the flesh and allow to degorge for about 10 minutes. It is important to degorge the aubergine.



Peel and chop the cloves of garlic. Finely chop the spring onions. Roughly chop the tomatoes.

Place the aubergine, spring onions, garlic, tomatoes and stock in a stockpot. Add a little salt. Cover and bring to the boil and cook for 35 minutes.

Puree the soup with handheld stick blender.

Remove the leaves from the coriander and sprinkle them over the bowls to serve.
