I've been bad again. Making more desserts. But this ones not too bad, I've swapped butter for nuttelex, a plant based spread and I've used multigrain bread and coconut palm sugar instead of white sugar. So I hope you like it.
Ingredients 3 slices of multigrain bread
Nuttelex to spread on the bread (or butter if you prefer)
1 teaspoon of vanilla
1 teaspoon of cinnamon
1/4 cup of coconut palm sugar
4 beaten eggs
1 cup of almond milk
1 tablespoon of chocolate chips (see notes)
1 tablespoon of goji berries
Preheat oven to 180 degrees Celsius.
Spread nuttelex or butter onto the bread and cut each slice into 2 triangles.
Arrange bread to fit into the dish
In a large oval shape baking dish arrange the bread, buttered side up, making all the pieces fit in.
In a bowl mix eggs, milk, vanilla, cinnamon and sugar and mix well.
Pour egg mix over the bread making sure to cover every piece of bread.
Pour egg mix over the bread
Sprinkle over the chocolate chips and goji berries.
Using a spoon pour some of the egg mix over the goji berries. This helps soften them a little when cooking.
Sprinkle on the goji berries and chocolate chips
Place in the oven for half an hour.
Remove from the oven and serve immediately.
For this recipe it is best to use a certain type of chocolate chip. I find the cheap ones like black and gold are good for this, as nestle choc chips say that they hold shape when baked, and you want some that melt in the oven.
For the goji berries I used a tablespoon but now I wish I used 2-3 tablespoons as they are so good for you and they are so yummy in this dish.
