‘Bread rolls’ are a crispy and crunchy evening snack, made of boiled potatoes and bread. The potato and carrot mixture stuffed in bread slices, shaped into balls and deep fried add to the taste buds, and are generally relished with tomato sauce or mint chutney.
Ingredients 2-3 boiled potatoes
Finely chopped coriander
2 finely chopped green chillies
1 grated carrot
1/2 tsp cumin seeds
A pinch of turmeric powder
1 tsp chaat powder (generally available at the Indian grocery store)
2 tsp lemon juice
2 slice white bread (you may use the bread of your own choice)
Oil for shallow frying
Salt to taste
Boil the potatoes in a cooker to make them a little soft. Peel them and mash them well.
Heat a little oil in a pan and add cumin seeds and green chillies to it.
When the cumin seeds start to splutter, add the mashed potatoes and grated carrot to it and mix the whole ingredients well.
Now add chaat powder, lemon juice, turmeric powder, coriander leaves and salt to the above mixture and mix the entire ingredients. Let it cook for around 4-5 minutes.
Take the bread slice and soak it in water. Ensure that the bread doesn’t absorb water overly; otherwise it might crack and break.
Squeeze the bread with your palm to remove the excess water.
Break the bread into pieces and stuff the mixture made above, inside the bread.
Roll the bread to join the edges and give it an oval shape.
Now heat some oil in a pan and shallow fry the potato rolls, till they become crispy and golden brown in color.
Transfer the fried balls on the tissue paper to remove the excess oil.
Serve the ‘bread rolls’ hot with tomato sauce or mint chutney.
