Bright Vegan Quinoa Salad

Quinoa has been hailed as a 'superfood' because it is the only grain which has all nine essential amino acids that make it a whole protein, which in turn makes it a 'super' grain.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 2 servings

Half a cup of quinoa
1 Red pepper
1 Orange
1 Avocado
1 Lemon
Black pepper
Olive oil
Cocout oil

Wash the quinoa in a serve and place in a saucepan of cold water. Set the heat to high and leave to boil for 5 minutes.

Spoon any of the flotsam off the boiling water, add all the seasoning.

1 tsp of coconut oil, cover and leave to simmer for 15 minutes.

Chop the red pepper into chunks and fry.

Peel and slice the orange into segments and place in the same bowl. Add the fried pepper.

Wash and tear the spinach and add to the bowl along with 1 tsp of olive oil, a squeeze of lemon juice, and a pinch of black pepper. Do not toss. Set aside.

Remove the lid from the saucepan and check the quinoa has cooked through. If so then add to the medley of orange and vegetables. Toss and enjoy.

Hi there I am just wondering where in the supermarket you get your quinoa from? I have only spotted the super expensive organic brand? Looks like a great recipe and I'd love to try making it :)
