Broad Beans, Tomato and Quinoa

Getting back to slow cooking, this is not a quick and easy recipe. Containing folate, iron and zinc, also known as fava beans, broad beans are a great vegetarian source of lean protein.

Preparation Time: 30 minutes
Cooking Time: 60 minutes
Serves: 2

Ingredients
3 ripe tomatoes
1 brown onion
1 clove garlic
2 cups of dry broad beans
1 cup white quinoa
1 teaspoon Italian herbs
1 teaspoon sweet Paprika
1 teaspoon coconut oil
4 cups of water

Method
Soak broad beans overnight in water
Cook broad beans for 30 minutes in boiling water
Cut up tomatoes, onion and garlic
Place Quinoa in a saucer with 2 cups of water
Simmer for 20 mins until Quinoa is like cooked rice
Place beans, onion, garlic, herbs, spice, 2 cups of water and oil in a pan and cook on medium heat for 30 minutes
Wait to cool and serve
