Broccoli Cheese

Cauliflower cheese is a traditional English dish, but if like me, you don't like cauliflower, swapping it for broccoli is a great idea. You can give it extra pungency by using stilton instead of cheddar, which makes a match made in heaven.

Preparation Time: 10 minutes
Cooking Time: 45 minutes
Serves: 2

Ingredients
500g broccoli heads
115g Stilton cheese
3 tbsp creme fraiche
1 tbsp margarine
1 tsp dried tarragon
5 tbsp milk


Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/325༠F/5 Gas.
Place the broccoli in a baking dish.
Melt the butter in a saucepan, stir in the tarragon, creme fraiche, and crumble in the cheese.
Once the cheese melts, stir in the milk and simmer at low heat for 5 minutes, stirring continuously to form a creamy sauce.

Pour the sauce over the broccoli.

Bake in the oven for 40 minutes.
