Broccoli Crust Pizzettes

These are as yummy as they are cute - and as healthy! The crust holds together really well, so you (hopefully) won't miss the real deal when eating this pizza. I've listed the toppings we used, but there are so many other ingredients you could try - sundried tomatoes, baby octopus, feta, smoked salmon, rocket, etc. I haven't listed the quantities of the topping ingredients as it will depend on how much of each you want to use.



Broccoli crust pizzettes


I baked my pizzettes in batches so it took over an hour all up, but if you have a large oven and multiple trays you will save a lot of time!

Preparation Time: 10 minutes
Cooking Time: 25-35 minutes
Makes: Approximately 20 pizzettes

Ingredients

Crust
2 large heads broccoli
2-3 large eggs
1 garlic clove, crushed
1 tsp dried Italian herbs
Salt and pepper, to taste

Toppings
Passata or tomato sauce
Cherry tomatoes, halved
Tomatoes, sliced
Zucchini, grated
Mozzarella, grated and/or sliced
Artichokes, halved
Kalamata olives, sliced
Green olives, sliced
Red onion, sliced
Chillis, sliced

Method
Preheat oven to 200C (390F) and line a tray with baking paper.
Chop off the ends of the broccoli stalks and roughly chop the rest of the broccoli heads.
Place the broccoli in a blender and blend until it forms fine pieces.
Pour into a mixing bowl and add the herbs, garlic and 2 eggs. Mix well. If the mixture doesn't stick together, add the 3rd egg (I did). Season with salt and pepper.
Place a large spoonful of the mixture onto the baking paper and flatten it out with the back of the spoon into a 4-5cm round, thickness 1/2cm. Smooth the edges with the tip of the spoon.

Repeat with the remaining mixture.
Place in the oven and bake for 15-20 mins, until the crusts are lightly browned.

Add your toppings, such as zucchini, green olive and mozzarella, or passata, tomato slices, artichokes, chili and mozzarella.

I laid out all the toppings so each person could assemble their own pizzette.


Bake for an extra 10-15 minutes, or until the cheese starts to turn golden brown.
Carefully remove the pizzettes with a spatula, as they are fragile, and place on your plates.
