Broccoli Soup

With Winter approaching, we all need to boost our immune system and this Broccoli soup does just that. Although it is very simple to make, it is very nourishing and so good for you - just looking at all that green make me feel healthy.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 4 servings

1 kilo broccoli
1 tablespoon olive oil
1 tablespoon unsalted butter
1 garlic clove, finely chopped
5 cups vegetable stock

Basic Ingredients


Roughly chop the head of broccoli, including the stems.

Chop the broccoli

Heat the olive oil and the unsalted butter in a large saucepan.

Add the roughly chopped broccoli and the finely chopped garlic, stirring continuously until soft.

Add the vegetable stock and simmer for 15 minutes.

Allow the soup to cool slightly before blending until it becomes a smooth consistency.

Serve hot, seasoned with salt and pepper, a garnish of parsley, a dash of cream and hot buttered toast on the side. Enjoy.
