Buddha's Delight

This traditional Chinese vegetarian dish is specially eaten on Chinese New Year's Day (around January - February each year), when people refrain from eating meat, in order to begin the year with a clear conscience, just like the Buddha. In Chinese culture, this dish is also known as Lo-Han Jai or Luo Han Zhai and is supposed to have 18 ingredients, each one having a special symbolic meaning such as birth, health, wealth, longevity etc.

Preparation Time: 30 minutes
Cooking Time: 10 minutes
Makes: 8 servings

Ingredients for Buddha's Delight


100 grams cellophane (vermicelli) noodles
1 cup filtered water
8 Shitaake mushrooms (fresh or dried)
2 gram tin water chestnuts
2 gram tin bamboo shoots
2 carrots
6 spring onions
8 snow peas
1/2 cup peanuts
1/2 chinese cabbage
200 grams fried tofu
2 tablespoons sesame oil
2 tablespoons rice wine
1/2 cup soy sauce
1 tablespoon cornflour
1 teaspoon sugar
1 teaspoon salt
Boiled rice - to serve


Prepare the cellophane noodles by soaking them in water for 20 minutes, then drain the water.

Chop all the vegetable ingredients and mix them together with the cellophane noodles in a large bowl.

Mix together the wet ingredients ( ) to prepare the Buddha's Delight sauce.

Sauce for Buddha's Delight

Add the sauce to a large wok and heat it to boiling, before adding all the vegetables. Stir fry quickly on high heat until the sauce has thickened and the noodles are transparent.

Happy Chinese New Year - Buddha's Delight

Serve Buddha's Delight with a bowl of boiled Jasmine Rice to bring in the new year in traditional Chinese style. What will your new year's resolution be?
