Christmas is almost here and it's party time. We are always on the lookout for an easy recipe that can impress the guests equally. I'm sharing with you this delicious corn fritters recipe which can be made ahead and heated up in the oven just before serving. The ingredients used in this recipe are easily available and budget friendly.
Ingredients 2 cans corn kernels
1 cup finely chopped onions
1/2 cup finely chopped red capsicum
1/2 cup finely chopped boiled potato
1 tbsp chopped ginger and garlic
3 tbsp chopped coriander
1/2 tbsp chopped green chilli (optional)
1/2 cup plain flour
salt to taste
oil for deep fying
sliced tomato for decoration
Jalapeno aioli to serve
Make a rough paste of the corn kernels in a blender. Make sure you drain all the water before doing this.
Mix all the chopped ingredients in a mixing bowl properly.
Mix in the flour and shape into small flat rounds.
Heat oil to a high heat.
Drop the shaped mixture in the oil and fry till golden brown and crispy
