Butter And Herb Haddock With Beetroot And Carrot

Butter-basted haddock in a paprika, thyme oil with fried carrot and beetroot will make you wonder why people ever choose cod.

Cooking Time: 15 minutes
Makes: 1 serving

Haddock fillet
Half a beetroot bulb
1 carrot
Tsp ground paprika
Tblsp salted butter
Half tsp ground black pepper

Add the seasoning and butter to a hot frying pan and add the fillet. Cook for 5 minutes.

Grate the beetroot into the pan, add the garlic. Repeat with the carrot.

Turn the heat to medium, toss the fish and gently cook the dish for the remaining time.

The vegetables may form some sort of mash - this is not a problem, and shows that the sugars are simply caramelising in the heat.
