Butterfly Cakes

My Grandpa used to make the lightest, fluffiest butterfly cakes around. Here is his time honoured recipe that our whole family can't get enough of.

Preparation Time: 45 minutes
Cooking Time: 20 minutes
Serves: 9

Ingredients
110g self-raising white flour
110g margarine
110g caster sugar
2 eggs
250ml double cream
9 glace cherries
55g chocolate chips

Method
Pre-heat oven to 190 ༠C/ 190 ༠C fan/375 ༠F/5 Gas.
Cream together margarine and sugar until light and fluffy.

Beat in eggs one at a time.
Fold in the flour.

Pour the mixture into cup cake cases, and bake in the oven for 20 minutes.

Allow the cakes to cool, and then thinly slice off the top of each one.
Slice the tops in half so that they look like wings.
Whip the cream until thick, and then spoon a dollop onto the top of each cake.
Stick the 'wings' on either side of the cake.
Add a cherry in the centre and sprinkle with chocolate chips.
