Butternut and Sweet Potato Soup

An original recipe using two of my favourite vegetables. Rich and satisfying, ideal for cool autumn nights.

Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 6 servings



Ingredients
Two medium onions
2 teaspoons minced garlic
2 tablespoons raw sugar
1/4 teaspoon hot chili
2 teaspoon dried leaf coriander
1 kg sweet potato
500g butternut
2 litres chicken stock
Light cream


Method
Dice the onions and sweat them in a heavy saucepan with a dash of olive oil.



Add the garlic, chili, coriander and raw sugar and cook for 4 or 5 minutes.

Add the stock and the peeled, diced sweet potato and butternut.



Cook on low for 35 minutes.

Blend.



Allow to cool and add cream.

Serve in cup, bowl or hollowed out cob bread roll.
