Ingredients 3 x bananas (the softer, the better) mashed
2 x large eggs
1 tbsp ground cinnamon
1/4 tsp ground nutmeg
1 cup plain flour
1/2 cup self-raising flour
3/4 cup brown sugar
150g butter or margarine
Method Preheat oven to 180°C & line loaf pan with non-stick baking paper or lightly grease with spray oil.
Melt butter to room temperature in microwave for 20-30 seconds. Whisk in eggs.
Combine flours, brown sugar, cinnamon & nutmeg in a large bowl. Add the butter mixture & bananas.
Pour into loaf pan & cook for 40-50 minutes or until inserted skewer comes out clean.
Set aside for 5 minutes in pan, then take out loaf to cool on wire rack for 10 minutes. Best served warm with butter spread.
You nuts? Add 1/4 cup crushed walnuts with banana.
Big softie? Cook for 35-40 minutes for a soft centre.
