Cajun Crusted Lamb Leg Roast

Imagine tender and juicy succulent lamb roast to perfection. This lamb roast makes a perfect family meal for lunch or dinner. It is simple but hearty and everyone will enjoy it!



Preparation Time: 10 minutes
Cooking Time: 50 minutes
Makes: 4 servings

Ingredients
500g lamb leg roast, washed and wiped dry
cajun seasoning
garlic seasoning
4 carrots, cut into long matchsticks
1 broccoli florets, cut into pieces
4 sweetcorn

Method
Preheat the oven to 200C fan-forced.

Sprinkle the cajun and garlic seasoning generously all over the lamb.



Put the lamb in the oven and roast for 40 minutes or until cooked to your liking.

Boil the carrots, broccoli florets and sweetcorn for 6-8 minutes, until they are cooked but still crunchy. Drain.



Remove the lamb from the oven. Cover with foil and let it rest for 10 minutes.



Slice the lamb and serve with the vegetables.
