Calamari

Calamari originated in the Mediterranean region. Squid rings coated with batter then, deep-fried. It has a condiment of marinara or tomato-based sauce.

This recipe is a Filipino version accompanying the dish with a sweet and chili sauce.


Preparation Time: 30 mins
Cooking Time: 15 mins
Serves: 3-4

Ingredients
Batter
75 g all-purpose flour
60 g cornstarch
50 ml milk
150 ml water
6 g salt
1/8 tsp ground black pepper
1 drop of yellow food coloring
Other ingredients
1 litre vegetable oil
100 g all-purpose flour
250 g squid rings
1 pinch parsley
60 ml sweet and chili sauce

Method
In a bowl, mix the flour, cornstarch, milk, water, salt, pepper and yellow food coloring.
Dredge the squid rings with flour. Dip it in the batter.
Heat the vegetable oil in a pan, deep-fry the squid rings until golden brown. Serve it with a sweet and chili sauce.
