Cannelli Bean & Rocket Soup

A hearty and nutrient packed soup with a lovely texture and flavour. This recipe will be sure to protect you against the winter chill thanks to the levels of antioxidants found in the tomatoes, and the immune boosting trinity of garlic, thyme and onion.

It is also a beautifully colourful and attractive meal that will fight against those winter blues!

Preparation Time: 10 minutes
Cooking Time: 1 hour 20 minutes
Makes: 6 servings


400g can cannelli beans
1 tbs olive oil
1 brown onion, finely chopped
2 carrots, finely chopped
2 celery sticks, finely chopped
2 tsp thyme leaves
1/4 tsp chilli flakes
2 garlic cloves, crushed
1 tbs tomato paste
400g diced tomatoes
4 cups water
1 bunch rocket, shredded

Heat oil in a large pot over a medium heat. Add and cook the onion, carrots and celery until soft.

Add thyme leaves, chilli flakes and garlic cloves, mixing through well.

Place beans, diced tomatoes, tomato paste and water in the pot. Bring to the boil. Reduce heat and simmer until beans are tender (about 1 hr).

Transfer the rocket to the soup mixture and stir through until leaves are wilted.

Season with pepper and extra chilli if required. We serve here with freshly cooked risoni, but it also combines well slices of toasted baguette.
