Makes: 12 or more cookies
Ingredients 1 1/4 cups of plain flour (Alternatively, use wholemeal flour. I did this by mistake and the biscuits turned out delicious and filling)
1/2 teaspoon of baking powder
1/2 teaspoon of salt
1/2 cup of brown sugar
1/2 cup of castor sugar
3 teaspoons of instant coffee
1/2 cup of softened butter
1/2 cup of white chocolate melts
Preheat oven to 180 degrees.
Dissolve instant coffee in a splash of boiling water.
Sift the flour, baking soda and salt into a bowl.
In a separate bowl, mix the butter, sugar, egg and instant coffee liquid together.
Gradually stir the dry ingredients (the flour, baking soda and salt) into the wet mixture.
Mix through the white chocolate melts.
Dollop mixture onto an oven tray covered with baking paper.
