Caramel Apple Squares with Pecan Nuts

Oozing with caramel sauce!

If you like caramel, you will love this recipe. It has apples in it so it can't be unhealthy!

You could substitute with the pecans, however they did give it an extra nice taste, and the combinations on this slice work brilliantly together.

As with much of my other baking, I have used coconut sugar as it is an organic product that is not real sugar, and therefore healthier, It is also not as sweet as sugar.

I have used bought caramel sauce in this instance, however you could make this yourself.

Preparation Time: 30 minutes
Cooking Time: 40 minutes
Makes: 16 servings

cup butter, softened
1 cup coconut sugar -or brown sugar
1 cup plain flour
1 cup rolled oats
1 tsp cinnamon
tsp baking soda
cup finely chopped pecans
3 cups chopped unpeeled apples-about 3
cup caramel topping
cup plain flour
Vanilla ice cream, optional
Additional caramel topping, optional

Heat the oven to 170C or 160 if fan forced oven. Grease a 32 cm x 22 cm pan.

Chop the pecans before starting.

In a mixmaster or similar, beat the butter and sugar on medium speed until it is well mixed.

Beat in 1 cup of the flour, oats, cinnamon, baking soda and pecans until well mixed and crumbly.

Press half of the crumbly mixture in the bottom of the pan and press down to form a crust. Keep the rest of the mixture for topping.

Slice the apples and spread over the crust in the baking dish.

In a small saucepan, heat cup caramel topping and cup flour. Bring to the boil, stirring constantly. Boil about 1 minute or until the mixture thicken slightly. At this stage I HAD to stop and clean out the saucepan as a special treat!

Drizzle this over the apples

Caramel mixture drizzled as evenly as possible

Sprinkle the reserved crumbly mixture on top of this.

Now ready to bake

Bake 35-40 minutes or until the top is a golden brown.

Mixture now baked

Cool for about 30 minutes before serving as it will break up less if you do this.

Sliced after 30 minutes

Top with ice cream and caramel topping if desired, and EAT.
