Ingredients 1 cup self-raising flour
3/4 cup brown sugar
1 teaspoon vanilla essence
1/4 cup sultanas
1/2 cup milk
80 grams butter, at room temperature
1 apple, peeled, thinly sliced
3 tablespoons golden syrup
1 cup boiling water
1/2 teaspoon cinnamon
Grease a deep, 20 cm round baking dish or similar and preheat the oven to 180 degrees.
Cream the butter and 1/4 cup of brown sugar until light in colour. Sift in the flour and cinnamon then add the milk, vanilla and egg. Mix well until smooth and well combined.
Fold the sultanas and sliced apples into the mixture then spoon into the prepared dish.
In a separate bowl or jug, combine the golden syrup, remaining sugar and boiling water. Stir until just combined then gently pour over the pudding batter.
Carefully place into the oven and bake for 35 minutes.
