Caramel slice takes me back to my childhood, back to school fetes where you could buy it by the slice or even the slab. Now I can make my own and share it with my children. If you don't have any condensed milk at home, you can use this home made condensed milk recipe.
Ingredients Base 1 cup plain flour
1/2 cup brown sugar
1/2 cup desiccated coconut
125 g butter, melted
Filling 395 g condensed milk
2 -3 tbs golden syrup
60 g butter, melted
Chocolate Topping 60 g copha, chopped
125 g chocolate
Preheat your oven to 180C and grease and line a slice tin.
Make the base by combining the flour, sugar, coconut and melted butter. Mix to form a dough and then press the dough into your prepared slice tin. Bake for 15-20 minutes until the base is cooked and golden on top. Set aside.
Make the caramel filling by place the condensed milk, golden syrup and butter into a saucepan.
Whisk over medium to medium high heat for 8-10 minutes until the filling turns golden.
Pour the filling on top of the base and bake for 12 minutes.
Set aside to cool completely (approx 3-4 hours) before making the topping.
Place the copha and chocolate into a saucepan over low heat. Stir until melted and combined.
Pour the chocolate mixture over the top of the caramel and set aside to cool completely.
Once the topping has set use a hot knife to cut it into slices.
