Caramelised Rum Bananas

This is an easy dessert to whip up on a cold night. The spiced rum gives the banana an extra kick, but you could easily omit it if you're serving to kids and would prefer to leave off the alcohol. I use Kraken Spiced Rum, but any dark rum will do.

Serve the bananas with some whipped cream; add a bit of extra rum and some vanilla bean for a bit of added flavour.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 1 serving (two if you're feeling generous)

Ingredients
2 teaspoons butter
1 banana
2 teaspoons brown sugar
2 tablespoons Kraken Spiced Rum
Splash of water
Pinch of nutmeg, cinnamon, and/or vanilla bean paste depending on your tastes

Method
Cut the bananas lengthways.

Melt the butter in a heavy based pan until foaming starts to reduce.

Add the bananas cut side down and cook, shaking for around 1 minute.

Add the rum and brown sugar around the banana. Cook for a further 30 seconds until the sugar starts to melt, keep shaking the pan.

Add the water and your flavours and cook for another 2 minutes.

Serve hot with whipped cream or ice cream.

Notes:
If you want more sauce, just double the quantities of everything except the banana.
