Carb Free Huevos Rancheros

The traditional Mexican meal huevos rancheros calls for tortillas, but if you're following a carb free diet you can give this meal a go. Without compromising on flavour, or depth, I give you my filling carb-free huevos rancheros.



Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 4 servings

Ingredients
Bunch of kale leaves
1 red pepper
1 orange pepper
1 tsp chilli powder
1 garlic clove
Salt and freshly ground black pepper
150ml/5fl oz tomato passata
1 tbsp olive oil
knob of butter
1 tsp black pepper
8 free range eggs (2 eggs per person)

Method
Finely chop the vegetables.



Place the chopped vegetables in a bowl along with the passata, chilli powder, and black pepper.



Heat the oil in a medium frying pan with a lid over a medium heat and add a quarter of the salsa.



Add the knob of butter and cook for 7 minutes on a medium heat.



Stir to warm through, then make a hole in the middle of the salsa and crack two eggs in the spaces.



Place the lid onto the pan and cook for 3-4 minutes.



The dish is ready when the eggs are cooked into the salsa and the whites are firm. If you like a firmer egg then cook for 5 minutes.



Slide the eggs and salsa onto a large plate and keep warm as you repeat this process three more times.



I love this meal after work. It's quick, filling, and a protein rich dinner that can be whipped up for the whole family in under 15 minutes.

The cooked salsa tastes even better the next day.
