Carrot and Zucchini Fritters

A perfect way to use up leftover spaghetti, these fritters are quick and easy to make when you don't have much time to cook but want something reasonably healthy to eat.

They don't cost much to make and can be on the table in ten minutes, provided you already have leftover spaghetti (a little quick cheat is to use 2 minute noodles as a substitute to the spaghetti). Better yet, they taste great.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
100g cooked spaghetti - leftover spaghetti is perfect (roughly 1 cup)
1 carrot
1 zucchini
olive oil
2 eggs

Method

Crack eggs into a bowl and lightly whisk.

Put spaghetti into a container. If you're feeling particularly lazy and don't want the extra dishes, you can even do the prep work in the leftover container.

Grate carrot onto spaghetti.

Grate zucchini onto spaghetti and carrot.

Mix together

Add whisked eggs and mix again.

Place olive oil into a medium heat frypan and spoon mixture into the pan once the oil is sizzling.

Flip once golden brown and set on one side.

Serve with sweet chilli sauce on the side and enjoy!

If you have leftovers from this, you can store them in an airtight container to take to work for lunch the next day. You could even double the mixture to ensure leftovers as they're great cold or hot the next day!
